The reason that items gathered from both of these professions are so valuable is that they serve as raw materials used in secondary crafting professions.
Before the release of Cataclysm you should be focused on leveling all of your gathering characters to level 80. While you are doing this you should also be leveling your gathering professions to the maximum which is currently capped at 450.
Once Cataclysm goes live instead of creating a new Worgen or Goblin - those newbie areas will be too crowded anyways - you should be doing all you can to reach level 85 as fast as possible.
